JoC-Ranch Dressing

From the Joy of Cooking cookbook

Ranch Dressing
1 cup
The original version was created at the Hidden Valley Guest Ranch in Santa Barbara in the 1950's. If you prefer a thicker dressing, stir in 1/3 to 1/2 cup sour cream or mayonnaise.

Combine in a blender of food processor until smooth:
1 glove of garlic, peeled
2-3 pinches of salt
(thinking why dirty the blender for this?
Crush the garlic with the back a knife with the salt to make garlic paste)

Remove to a bowl. Add and whisk until well blended:
*3/4 cup buttermilk
2-3 Tablespoons fresh lime juice
1 Tablespoon minced cilantro or parsley
1 Tablespoon snipped chives
Salt and pepper to taste

Taste and adjust the seasonings. Use immediately or cover and refrigerate.

Tip:
To make buttermilk, use 1 cup milk and 1 tablespoon lemon juice or white vinegar. Allow it to sit for a few minutes.
Or
Plain yogurt or sour cream

Ranch Dressing 2 Ways

The first recipe is something similar to Rachael Ray's homemade Ranch recipe. I couldn't find the recipe on here site, and anyone who watches her show, knows she never measures so you are going to have to adjust the measurements to your liking.

Rachael Ray Ranch Dressing
Buttermilk
Chives~Chopped
Dill weed~Chopped
Parsley~Chopped
1 clove grated garlic
Salt and Pepper to taste
add a little reduced fat or fat free sour cream, just enough to thicken it up.
Stir to combine.

This second recipe I found on the web somewhere and looks good.

Sage Stuffing

This is my grandma's recipe. It's just not Thanksgiving or Christmas to me, without it.

12 cups of stale bread, torn into bite size pieces
1 T. salt
1/2 t. black pepper
2 eggs, beaten
1 cup chopped onion
1 t. ground sage
1 t. poultry seasoning
1 t. sweet paprika
1/4 cup butter
1 c. or more boiling water

melt the butter in the boiling water.
pour everything, including the herbs and onion and eggs over the bread in a large bowl. Stir until combined.
You may need more water. You will need enough water to hold it all together.
Stuff into bird or place in a buttered 2 quart cassarole dish. Bake at 350 for 1 hour.
