1 tomato chopped or sliced, your choice
1 Tbsp Extra Virgin Olive Oil (EVOO)
1 teaspoon white, rice or wine vinegar
salt and pepper
Chop the tomatoes and place them in a bowl. Add EVOO and vinegar. Add more salt then you think. Tomatoes need a lot of salt and then pepper to taste.
Mix well. Allow flavors to meld at room temp for at least 30 minutes. Will taste better if allowed to marinate for 2 hours.
Can be refrigerated but remember, refrigeration will reduce the flavor of the tomatoes.
This tastes great on salads or on hamburgers or hot dogs. Also tastes great right out of the bowl!
