Pickled Red Cabbage

Pickled Red Cabbage

1/2 medium head red cabbage (1 pound)
3/4 teaspoon salt
3 Tablespoons raw cider vinegar

Alternate ingredients:

  • 1 small head red cabbage (about 2 1/4 pounds)
  • 1/2 cup red-wine vinegar
  • 1 tablespoon sugar
  • Coarse salt and freshly ground pepper
  • 3 tablespoons olive oil
  • 2 tablespoons poppy seeds


Finely slice red cabbage, preferably with a  mandoline.  Place cabbage in a bowl and add salt and vinegar.  Using your hands to mix thoroughly, squeeze the cabbage until it begins to wilt and get juicy.  Let stand for 30 minutes.  Adjust seasonings to taste.  Add a little extra salt and vinegar if you plan on serving the following day, since the flavor fades as it marinates.

Cunchy Broccoli Slaw

Crunchy Broccoli Slaw

Ingredients

  • 8 slices bacon
  • 1 large head broccoli
  • 1 small red onion, minced (1/2 cup)
  • 1/3 cup golden raisins
  • 1/3 cup mayonnaise
  • 3 tablespoons white balsamic vinegar
  • 2 tablespoons honey
  • Salt and pepper

Preparation

Cook bacon in a large skillet or on a griddle over medium heat until browned and crisp. Drain on paper towels. Crumble into 1/2-inch pieces; set aside.
Cut florets from broccoli stems and chop into small pieces. Transfer to a salad bowl and toss with minced onion and raisins.
In a small bowl, whisk together mayonnaise and vinegar until smooth. Add honey, salt and pepper, whisking to combine. Pour dressing over broccoli mixture and toss to coat evenly. Crumble bacon pieces over broccoli slaw and serve immediately.

Coleslaw - On The Lighter Side

Nothing fancy about the way I prepare my slaw.  It's just plain and simple.  Plain and simple is good.  I've lightened up the original recipe by using light mayonnaise and substituted Splenda for the sugar.


1 bag of shredded cabbage or slaw mix
3/4 cup light mayonnaise (add a little more of less, depending on how creamy you like yours.  I use a scant 3/4 cup)
1/4 cup rice vinegar
1-2 Tablespoons Splenda
1/2 teaspoon dill weed
1/2 teaspoon celery seed
S & P to taste

I don't care what it says on the bag.  I wash my prepackaged greens even though they say it's been washed.  Be sure to throughly dry the cabbage. 

In a large bowl, combine all the ingredients except the cabbage.  Whisk together until creamy and combined.
Add cabbage and toss to coat.  Taste to adjust seasoning if needed.
Store in airtight container and refrigerate.
I prefer the taste of slaw when it's been refrigerated overnight to allow the flavors to meld together.
Should keep for 3 days, but it never lasts that long.  hehe
