Marinated Tomatoes
1 tomato chopped or sliced, your choice
1 Tbsp Extra Virgin Olive Oil (EVOO)
1 teaspoon white, rice or wine vinegar
salt and pepper
Chop the tomatoes and place them in a bowl. Add EVOO and vinegar. Add more salt then you think. Tomatoes need a lot of salt and then pepper to taste.
Mix well. Allow flavors to meld at room temp for at least 30 minutes. Will taste better if allowed to marinate for 2 hours.
Can be refrigerated but remember, refrigeration will reduce the flavor of the tomatoes.
This tastes great on salads or on hamburgers or hot dogs. Also tastes great right out of the bowl!

Citrus-Marinated Skirt Steak

Ingredients
- 1/2 cup orange juice
- 1/4 cup fresh lime juice
- 3 cloves garlic, chopped
- 1/4 cup finely chopped fresh cilantro
- 1 teaspoon salt
- 1 teaspoon cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper
- 1 1/4 pounds skirt steak
Preparation
1. Combine orange juice, lime juice, garlic, cilantro, salt, cumin, oregano and crushed red pepper in a large ziplock bag. Add steak, seal bag and turn to coat with marinade. Let stand at room temperature for 15 minutes.
2. Preheat a gas grill to high. Oil grill. Remove steak from bag, discarding excess marinade. Grill steak to desired doneness, about 2 minutes per side for medium-rare. Transfer steak to a cutting board and allow to stand for 5 minutes before slicing and serving.
