HAM LOAF

HAM LOAF
3 1/2 To 4 pounds Ham Loaf
2 eggs
1 cup dried bread crumbs
1 cup evaporated milk
1/8 teaspoon salt
1/8 teaspoon ground black pepper
1 cup brown sugar
1 tablespoon mustard powder
1/4 cup cider vinegar
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine the ham loaf, eggs, bread crumbs,
evaporated milk, salt and ground black pepper. Mix all together
well and form into a loaf. Place loaf into a lightly greased 9x13
inch baking dish.
Bake at 350 degrees F (175 degrees C) for 90 minutes.
While the loaf is baking, combine the brown sugar, mustard
powder and vinegar. Mix well and pour over the loaf in the final
15 minutes of baking

Bean, Ham & Bacon Soup
Ingredients
| 4 can(s) | great northern beans; drained and rinsed (or use dry beans & soak overnight) |
| 1/2 lb | bacon, fried crispy and crumbled |
| 1/2 lb | ham, diced & fried golden brown |
| 3 md | carrots, diced |
| 3 | celery stalks, diced |
| 1 md | onion, minced |
| 1/2 tsp | thyme, dried |
| 1 tsp | garlic powder |
| 1 can(s) | tomato paste (6 oz) |
| 6 c | vegetable stock |
| 1 Tbsp | red wine vinegar |
| salt & pepper, to taste |
Directions

Place all ingredients except wine vinegar, beans, salt and pepper in a large kettle. Simmer until veggies are tender. Add beans until cooked through. Stir in vinegar. Season with salt & pepper if needed.

Use an immersion blender to puree some of the beans in the pot to thicken to your desired consistency.

You probably won't need to add salt to this as there is plenty from the bacon and ham. I used lower sodium bacon and it was perfect.6.13.2012

Ingredients
- 1 lb frozen frozen tater tots
- 1/2 lb diced ham
- 1 chopped onions
- 1 green bell peppers, diced
- 1 cup shredded cheddar cheese
- 6 eggs
- 1/2 cup milk
Directions
- In 4-5 quart crock pot, layer ingredients in order: tater tots, ham, onions, green peppers, and cheese.
- Repeat layers two more times, ending with cheese.
- In a medium mixing bowl, combine eggs and milk and beat with whisk or egg beater until combined.
- Season with salt and pepper to taste.
- Pour mixture over layers in crock pot.
- Cover crock pot and cook on low for 10-12 hours.

Ham
1 ham shank
salt
water
Rub shank with salt until covered.
Pour 2 inches of water into bottom of pan.
Cover with aluminum foil.
Bake at 325 degrees for 6 hours
Fried Okra
Self-rising cornmeal
1 pound fresh okra
Salt
Olive oil
Rinse okra.
Trim clean okra into rounds, each one thumb-width wide.
Generously salt okra.
Coat with self-rising cornmeal.
Heat 1 inch olive oil in skillet.
Drop okra into heated olive oil. Stir gently to prevent sticking.
Cook until golden brown.
Drain okra on paper towels.
Blackberry Cobbler
1 stick butter
1 cup sugar
1 cup whole milk
1 cup self-rising flour
1 1/2 cans blackberries
2 cans blackberry juice
Mix flour and sugar until well-blended. Pour in 1 cup cold milk and mix to make batter.
Heat skillet on medium high, then melt butter.
Pour batter into cast-iron skillet.
Pour blackberries and juice into middle of pan; do not stir.
Bake for 40 minutes at 425 degrees.

Ham and Cheese Sliders
Ham and Cheese Sliders
24 white dinner rolls
24 pieces ham24 slices Swiss cheese
1/3 cup mayonnaise
1/3 cup miracle whip
Poppy seed sauce
1 Tablespoon poppyseeds
1 1/2 Tablespoons yellow mustard
1/2 cup butter, melted
1 Tablespoon minced onion
1/2 teaspoon Worcestershire sauce
In a small bowl, mix together mayonnaise and miracle whip. Spread onto both sides of the center of each roll. Place a slice of ham and a slice of Swiss inside of each roll. Close rolls and place them into a large baking dish or heavy cookie sheet. Place very close together.
In a medium bowl, whisk together all of the poppy seed sauce ingredients. Pour evenly over all of the sandwiches. Let sit 10 minutes or until butter sets slightly. Cover with foil and bake at 350 degrees for 12-15 minutes or until cheese is melted. Uncover and cook for 2 additional minutes or until tops are slightly brown and crispy. Serve warm.
** sandwiches can be assembled a day ahead and kept in the fridge ready to bake.
